VPA Stainless steel 3 blades. Says hardened to 42 Rockwell on their web site. Anyone have any experience with these?

Heaviest they make in stainless are 150gr, so I haven't used them. I'm sure though, just like everything else VPA, they are great.

Talked to one of the guys at VPA on the phone today. He says that they are running 416 grade stainless and they only make them in the softer steel due to price. He said they will curl due to them being so soft. He agreed that the 1045 carbon steel they use is superior. He also mentioned that their new single bevels are flying off the shelves.

I broke one at the base on a pig shoulder once.
