I'm interested in hearing any experiences as well. The Min-Wax water based poly holds up for me.

I've been using True North sealer for a while. It holds up about the same as MinWax fast dry poly. The main advantage for me is that it is truly clear and doesn't make my white crown dip yellow. It is pricy compared to others. Also, a spray of regular silicone lubricant on the fronts of the arrows prevents them sticking to targets. This is necessary for any wood arrow sealant in the round targets used by our college shooting sports club.

I've had true north finish in the tube for about a year. I add a little liquid every so often, have had no issues. ended up with a quart of thunderbird water based stuff from a raffle. guess I'll try that next.

I get good shelf life with the clear if I put it back in the bottle after using. It lasts at least a year that way. The white crown dip hasn't lasted as long. If I'm making three or four dozen a month, I never see any issues.
