Braised Bear Roast

So, if you were successful on your spring bear hunt like I was you could make a braised bear roast (or deer, elk, moose, or whatever). In a large frying pan with a tight fitting lid, Brown the roast on all sides in olive oil on fairly high heat. Next add carrots and onions. Then add seasoning. I used minced garlic, red chilis, rosemary, coarse salt, ground pepper, mustard seed, and sugar. Cover tightly and simmer on low heat for about 4 hours. Turn roast and stir veggies occasionally. Comes out tasty and tender. Good with mashed potatoes and gravy! Enjoy!

That looks delicious! I prefer bear to venison although I do like venison. You can have my share of the lope though.

That really looks good. I don't get to bear hunt much and the outfitter I have hunted with in Quebec would not eat bear on a bet.(That is a whole other story!) As a result my two bears have not made it to the dinner table. On my last bear hunt a buddy of mine from Missouri decided to cook a bear backstrap. Wrapped it in foil slow oven cooked it for several hours. It was fantastic! Some of the best venison I have ever tasted. If I am ever able to take another bear, you can be sure I will be bringing the meat home with me.
