The sulfur shelf that comes early in summer and has that frosty peach color with a whitish underside is a slightly different variety, Laetiporus sulfureus v. semialbinus. Not everyone can eat this mushroom; it may depend on what species of wood it was growing on. It is, however, a safe one to experiment with...just start with small doses, when it is in its tenderest texture (it should be about the same texture as liver when you slice it; soft and juicy).
